Breakfast IBS Recipe Five




This Breakfast IBS Recipe Five is a delightful IBS friendly diet to be served on the fifth day of the 1st week.


Bi-Quinoa Salad - Serves 1

IBS Bi-Quinoa Salad Breakfast



Ingredients:

1 cup vegetable broth
1/4 cup white quinoa, rinsed thoroughly, drained
1/4 cup red quinoa, rinsed thoroughly, drained
1 tablespoon extra virgin olive oil
1/2 an ear of fresh corn, kernels removed
1/2 small red bell pepper, diced
1 scallion, minced
1/4 teaspoon fresh parsley, chopped
Salt and freshly ground black pepper; to taste



Preparation:

Add the broth to a small pan. Heat over high temperature until the broth boils. Reduce heat to low. Pour in the white and red quinoas and cover. Wait for about 15 minutes until the broth has been absorbed and the quinoa is soft. Meanwhile in a different skillet, pre-heat the olive oil over low-med heat. Add into the oil, the corn kernels, bell pepper, scallions and parsley. Cook for about 6 minutes. Once quinoa is cooked through, combine the vegetables to it. Season to taste. Refrigerate for about 10 minutes. Serve chilled.
