Breakfast IBS Recipe Seven




This Breakfast IBS Recipe Seven is a delightful IBS friendly diet to be served on the seventh day of the 1st week.


Potato and Fruit Salad - Serves 1

IBS Potato and Fruit Salad Breakfast



Ingredients:

2 teaspoon olive oil
1/2 red bell pepper, chopped
1/2 sweet potato, peeled, cooked and cut into bite sized pieces
1/2 apple, cut into bite sized pieces
1/2 apricot, cut into bite sized pieces
1/2 ripe banana, cut into bite sized pieces
1 wedge of freshly squeezed lemon juice
2 tablespoon soy cream
1 teaspoon corn syrup
1/2 tablespoon chive, chopped
Salt and freshly ground black pepper; to taste



Preparation:

Preheat a pan over med-high heat. Add the olive oil and wait until it sizzles. Saute the bell pepper until soft then remove to cool. In a mixing bowl, combine the potato, apple, apricot and banana together. Splash with lemon juice. Mix the soy cream, corn syrup and chive in a separate bowl. Pour the dressing over the salad. Combine the peppers. Season to taste with salt and pepper. Toss lightly but thoroughly. Serve chilled.
