Dinner IBS Recipe Twelve




This Dinner IBS Recipe Twelve is a delightful IBS friendly diet to be served on the twelfth day of week 2.


Chicken Strips with Coconut Lemon Rice - Serves 1

IBS Chicken Strips with Coconut Lemon Rice Dinner



Ingredients:

1 cup water
1/2 cup basmati rice, well rinsed
1 tablespoon olive oil, divided
1 (1/4 pound) chicken breast strips
1/2 tablespoon red lentils
1/2 tablespoon mustard seeds
2 tablespoons freshly squeezed lemon juice
1 tablespoon fresh coriander leaves, chopped
1/4 teaspoon turmeric, minced
2 tablespoons coconut flakes



Preparation:

Pre-heat a small pot over high heat. Add the water. Wait until it boils. Add the basmati rice and lower the heat to medium. Cook for 10 minutes while covered with lid. Remove the pot from the heat and let it sit for another 10 minutes. Pre-heat a medium skillet over med-high heat. Add the olive oil. Wait until it sizzles. Add the chicken strips and cook each side for about 3-4 minutes or until cooked through. Remove the chicken strips and wrap in foil to keep warm. Add the remaining olive oil. Wait until it sizzles. Add the lentils and mustard seeds. Cook until the seeds start to pop. Stir in the lemon juice, coriander, turmeric and coconut. Cook for 1 minute. Add the basmati rice to the pan. Mix well and let it simmer for 1-2 minutes. Remove from the heat and scoop the contents onto a plate. Unfoil the chicken strips and place onto the plate as well. Serve immediately.



Side Items:

Spinach salad or mixed greens
