Lunch IBS Recipe Eight
This Lunch IBS Recipe Eight is a delightful IBS friendly diet to be served on the eighth day of week 2.
Chicken with Garlic and Baby Corn - Serves 1
Ingredients:3/4 tablespoon olive oil 1 chicken breast, cut into bite-sized pieces Salt and freshly ground black pepper; to taste 1/3 can of baby corn, diced 1/3 red bell pepper, diced 1/4 yellow onion, diced 1 tablespoon heavy cream 1 tablespoon creme fraiche 1/2 clove of garlic, minced
Preparation:Pre-heat a small skillet over med-high heat. Add the olive oil. Wait until it sizzles. Season the chicken bites with salt & pepper. Place the chicken bites into the pan. Cook through and until light brown. Add the baby corn, bell pepper and onion. Fry for 1 minute. Add the cream, creme fraiche and garlic. Simmer for 2-3 minutes while stirring. Season with additional salt & pepper. Serve immediately.
