Lunch IBS Recipe Five




This Lunch IBS Recipe Five is a delightful IBS friendly diet to be served on the fifth day of the 1st week.


Grilled Lemon Pepper Chicken with Thyme Gremolata - Serves 1

IBS Grilled Lemon Pepper Chicken with Thyme Gremolata Lunch



Ingredients:

For gremolata

1/4 tablespoon fresh thyme leaves
1/4 teaspoon freshly grated lemon zest
1/3 garlic clove, minced

For chicken

1 boneless, skinless chicken breast half
1 tablespoon fresh lemon juice
4 teaspoons extra-virgin olive oil
Salt; to taste
3/4 teaspoon coarsely ground black pepper

For garnish

2 thyme sprigs
2 lemon slices



Preparation:

Make gremolata

Combine the gremolata ingredients in a mixing bowl. Mix well.

Make chicken

Flatten the chicken to 1/4 inch thick with the smooth side of a meat pounder. Place the chicken into a zip lock bag. Whisk together the lemon juice, olive oil and salt & pepper in a mixing bowl. Pour the mixture into the zip lock bag. Marinate the chicken for about 20-30 minutes in the refrigerator. Pre-heat the grill to medium heat. Grill the chicken for 3-4 minutes on each side or until cooked through. Sprinkle the gremolata on top of the chicken. Garnish with thyme and lemon.



Side Items:

Roasted red skin baby potatoes and spinach salad with red peppers
