Lunch IBS Recipe Nine




This Lunch IBS Recipe Nine is a delightful IBS friendly diet to be served on the ninth day of week 2.


Creamy Salmon with Lemon - Serves 1

IBS Creamy Salmon with Lemon Lunch



Ingredients:

1/2 tablespoon butter
1/2 small onion, diced
1/3 lemon peel, finely grated
1/2 carrot, coarsely grated
1/2 cup of water
1 teaspoon concentrated vegetable stock
1/4 cup of heavy cream
1/2 tablespoon corn starch mixed with 1 tablespoon cold water
Salt and white pepper; to taste
1 fresh salmon fillet, cut into large bite-sized pieces



Preparation:

Pre-heat a small pot over med-high heat. Add the butter. Wait until it melts. Add the onion, lemon peel and carrot. Cook for 2-3 minutes. Add the water, vegetable stock and cream. Bring to a boil. Cook for about 5 minutes. Add the cornstarch mixed with water. Add seasoning with salt and white pepper. Gently add the salmon pieces into the pot and stir. Reduce heat to low. Cook for about 5 minutes or until the salmon pieces are cook through. Serve immediately.



Side Items:

Riced potatoes or steamed rice with boiled potatoes
