Lunch IBS Recipe Six




This Lunch IBS Recipe Six is a delightful IBS friendly diet to be served on the sixth day of the 1st week.


Ginger Chicken Couscous - Serves 1

IBS Ginger Chicken Couscous Lunch



Ingredients:

4 teaspoons olive oil, divided into 3 equal parts
1/3 pound chicken breasts, medium diced
1 wedge of freshly squeezed lemon juice
1/3 teaspoon fresh ginger, minced
1/4 red bell pepper, diced
1/4 clove of garlic, minced
1/4 leek, minced
1/4 cup chicken broth
1/2 cup couscous
1/2 large tomato, diced
1/4 teaspoon tarragon, minced
Salt and freshly ground black pepper; to taste



Preparation:

Pre-heat a medium skillet over med-high heat. Add the olive oil. Place the chicken dices into the pan. Cook through and until slightly light brown. Add the lemon juice and ginger. Cook for about 1 minute. Remove the chicken dices. Add the olive oil to the pan. Bring to a sizzle. Add the bell pepper, garlic and leek. Cook for about 3 minutes and remove. Pour the chicken broth into the pan and bring to a boil. Remove the chicken broth and mix with the couscous in a mixing bowl. Add the remaining olive oil and mix. Leave it sit for 5 minutes. Mix in the chicken dices, sauteed vegetables, tomatoes and tarragon. Stir well but gently. Season with salt & pepper. Serve.
