Breakfast IBS Recipe Eleven

This Breakfast IBS Recipe Eleven is a delightful IBS friendly diet to be served on the eleventh day of week 2.

Parsley and Bulgur Salad - Serves 1

IBS Parsley and Bulgur Salad Breakfast


1/2 cup bulgur
1 cup water
2 tablespoon fresh parsley leaves, very finely chopped
2 tablespoon onion, finely chopped
1/2 tomato, seeded and finely chopped
1 tablespoon extra virgin olive oil
1 wedge freshly squeezed lemon juice
Salt and freshly ground black pepper; to taste


Cover the bulgur with the water for about 10-15 minutes or until soft. Remove the bulgur and place into a medium sized salad bowl. Add the parsley, onion and tomato to the bowl of bulgur. Mix the olive oil, lemon juice and salt & pepper in a separate bowl. Add to the salad. Toss lightly but thoroughly. Allow to season in refrigerator for 10 minutes. Remove from refrigerator and serve chilled.
