This Breakfast IBS Recipe Ten is a delightful IBS friendly diet to be served on the tenth day of week 2.
Romaine Salad with Beets and Pears – Serves 1
Ingredients:
1/4 cup pineapple slices with juice
1/4 tablespoon crystalized ginger
2 teaspoon raspberry vinegar
1 tablespoon extra virgin olive oil
1 cup romaine lettuce, shredded
1/2 beet, cooked and sliced in thin strips
1/2 pear, peeled, core removed and sliced in thin strips
Salt; to taste
Preparation:
Add into a blender the pineapple with juice, ginger, vinegar and olive oil. Puree to a smooth consistency. Pour into a medium sized mixing bowl. Add the romaine lettuce, beet and pear into the bowl. Toss lightly but thoroughly. Season with salt to taste. Serve chilled.
