This Dinner IBS Recipe Fourteen is a delightful IBS friendly diet to be served on the fourteenth day of week 2.
Steak with Broad Bean Risotto – Serves 1
1/4 pound tender beef, cut in half
1 tablespoon olive oil, divided
1/2 tablespoon butter
1/2 small yellow onion, diced
1 clove of garlic, minced
1/2 cup arborio rice
1 cup chicken stock
1/4 cup baby broad beans, removed from pod
Salt and white pepper; to taste
1/4 cup alfalfa sprouts
Pre-heat a medium-sized skillet over med-high heat. Add the olive oil. Wait until it sizzles. Place the beef pieces into the pan for 3-4 minutes or until browned to your preference. Remove the beef pieces and place onto a plate covered with foil to keep warm. Add the butter and remaining olive oil to the pan. Wait until the butter melts. Add the onion and garlic. Sauté for 3-4 minutes. Add the rice and stir gently. Cook for 2-3 minutes until the rice lightly browns. Pour in half the chicken stock gradually. Stir constantly. Cook for about 10 minutes or until the pan starts to dry. Pour in the remainder of the chicken stock gradually. Continue to stir constantly. Cook for another 5-7 minutes or until rice is chewy. Add the broad beans and season with salt & pepper. Stir well. Cook for 1 minute. Remove and add to the plate. Top the risotto with alfalfa sprouts. Serve.
