Comfort Salsa Corn Soup – 2 Servings


IBS Comfort Salsa Corn Soup Snack


Ingredients:

For Salsa:

1 tablespoon pineapple, finely diced
1 plum tomato, diced
1 tablespoon fresh parsley leaves, finely chopped
1 tablespoon lemon juice
Salt and black pepper; to taste

For Soup:

1 tablespoon olive oil
1/2 carrot, grated
1/2 red onion, finely diced
1 garlic clove, minced
1/4 teaspoon dried oregano
1 ear of fresh corn, kernels removed
1 tablespoon chicken stock (concentrated)
2 cup of water
Salt; to taste
1 tablespoon regular cream


Preparation:

Make Salsa

Combine all ingredients in a mixing bowl and stir. Season to taste.

Make Soup

Pre-heat a large skillet over medium heat. Add the olive oil. Wait until it sizzles. Add the carrot, red onion, garlic and oregano to the pan. Cook for 3 minutes. Add the corn kernels. Cook for another 5 minutes. Add the chicken stock, water and salt. Cook for an additional 5 minutes. Use a stick blender or regular blender and blend the soup until it has a smooth texture. Add the cream and stir gently.

Top soup with salsa. Serve.
