This Lunch IBS Recipe Seven is a delightful IBS friendly diet to be served on the seventh day of the 1st week.
Chicken with Lime and Ginger – Serves 1
1/2 tablespoon olive oil
1 chicken breast, sliced strips
Salt and freshly ground black pepper; to taste
1 wedge of freshly squeezed lime juice
2 tablespoons of heavy cream
1 clove of garlic, minced
Pre-heat a small skillet over med-high heat. Add the olive oil. Wait until it sizzles. Season the chicken strips with salt & pepper. Add the chicken strips to the pan. Cook for 5 minutes. Add the lime juice, cream and garlic. Simmer for another 5 minutes. Serve immediately.
Steamed beans, red bell pepper slices and a bed of rice
